I had recently stocked up on chicken, buying a bulk pack from the grocery store to save some money. But as I stared into my freezer, I realized that I had gone a little overboard. I had so much chicken that I didn’t know what to do with it all. And that’s when the crazy ideas started popping into my head.
At first, I thought about just cooking up some basic chicken breasts and serving them with a side of vegetables. But that seemed too boring. So, I started to experiment in my head. Maybe some chicken tacos? Possibly. I could add chicken to my salads, make chicken soup, or how about a chicken pizza?
My mind became more and more crazier and some of these ideas got. What if I made a chicken ice cream? Or a chicken smoothie? What if I made chicken-flavored popcorn? The ideas kept coming, and I couldn’t stop myself from, though some should have never been thought of at all if I’m being honest
I decided to try to make some sandwiches. Friends were coming over to watch football this weekend. It would be the best time to try to experiment… and I mean, what drunk person would rightfully not eat food? Even if it was just so so?
What we’re cooking ~ buffalo chicken sandwich!
Ingredients:
- 2 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons unsalted butter
- 1/4 cup hot sauce (depending on personal taste and spicy comfort level)
- 1 tablespoon honey
- 1/4 cup mayonnaise
- 2 tablespoons ranch dressing
- 4 hamburger buns
- 4 slices of cheddar cheese
- Lettuce and tomato (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the chicken breasts in half, so you have 4 thin pieces. Season them with salt, black pepper, and garlic powder.
- In a shallow dish, mix the flour and 1/4 teaspoon of salt together.
- Melt the butter in a skillet over medium-high heat.
- Dip each chicken piece into the flour mixture, shaking off any excess. Add the chicken to the skillet and cook for about 2-3 minutes per side, or until golden brown.
- In a small bowl, whisk together the hot sauce and honey.
- Once the chicken is cooked, brush each piece with the hot sauce mixture. Place the skillet in the oven and bake for 8-10 minutes, or until the chicken is fully cooked.
- While the chicken is baking, mix the mayonnaise and ranch dressing together.
- Toast the hamburger buns.
- Assemble the sandwich by placing a piece of chicken on the bottom half of each bun. Add a slice of cheddar cheese on top of the chicken, followed by lettuce and tomato (if desired). Spread the ranch dressing mixture on the top half of each bun.
- Serve the sandwich with your favorite side dish and enjoy!
Note: You can adjust the amount of hot sauce and honey in the recipe to your desired level of spiciness.
